Whisk vigorously for about 10 mins or until thick and creamy. Remove from the heat. Transfer the mixture to a large heatproof bowl. Beat with electric mixer on high speed, for about 5 mins or until the mixture is thick and holds its shape.

Spoon the marshmallow filling into a piping bag fitted with a 3/4-inch star tip. Pipe the filling on the flat side of half the cooled cookies; sandwich with the remaining cookies. Serve dusted with sifted powdered sugar.
