Preheat oven to 350 F.

1. In a large food processor (I think a blender would work as well) puree the drained and rinsed beans until smooth.

2. Add the applesauce, sugar, peanut butter, egg and vanilla and blend well.

3. Add the flour, baking soda and salt and once again blend until smooth.

4. Stir in the first amount of mini chocolate chips.

5. Line your mini muffin pans with paper liners and evenly divide the batter. I got 39 mini cupcakes. If you don't use liners, grease pans well or your cupcakes might stick and tear apart when you remove them.

6. Sprinkle the tops of the cupcakes with the reserved mini chocolate chips.

7. Bake for 13 minutes or until a toothpick inserted in the center of one comes out clean. Remove from oven.
