drizzle of olive oil

1 teaspoon olive oil
6 ounces chopped pancetta or bacon
2 cups thinly sliced onions
2 teaspoons chopped garlic
1/4 cup rice wine vinegar
6 cups fresh baby spinach leaves, washed and patted dry
2 ounces crumbled Goat's cheese
