Warm Potato Salad With Steak

   Put a pot of salted water on to boil and cut the potatoes into 1 inch cubes. Boil potatoes for about 10 mins. (or until a fork can be easily inserted).

   While potatoes boil, chop Pepper, Tomato, and Green onions into a medium to fine dice and place in a large mixing bowl.

   In a smaller bowl, make a dressing with the shallot, vinegar, mustard, herbs, and olive oil, wisking well.

   When Potatoes are cooked, drain and set aside. Then heat a large, heavy skillet with a bit of oil, and cook the steaks until medium rare (about 4 mins. per side).

   While steaks are resting, add potatoes (they should still be warm) and dressing to the large bowl, mix and season to taste with salt and pepper.

   Divide the salad amongst 4 plates. Slice the meat on the diagonal, and place half a steak on each, fanning them over the salad. serve immediately.
