Wrap beets individually in tin foil and place in 400 degree oven for about 30-45 minutes. Take them out and peel the skin off. Set aside.

While those are cooling, slice endives(shred) and fry those in the veg. or peanut oil until crispy-watch these carefully.

Now that the beets are cool, slice them as thin as you possibly can without wrecking them---they should take on the appearance of carpaccio. Slice the goat cheese into 12 pieces.

Now, lay about 12 thin slices of the beets on a plate, and next place 3 pieces of the goat cheese in a triangular form (like a clover) and last, pile come of the frisee greens on top. Drizzle with a little olive oil and white wine vinegar, and top with salt and pepper to taste.
