3 Tbsp. olive oil
6 slices Mozzarella cheese
1 pt. heavy cream
1 c. grated Parmesan cheese
2 Tbsp. chopped parsley
salt to taste

Dip chicken in eggs.

Place bread crumbs in shallow bowl; coat chicken with bread crumbs.

In large skillet, heat oil until hot.

Place chicken in skillet and brown lightly on both sides.

Remove from skillet and place in baking dish.

In saucepan, mix together the heavy cream, Parmesan cheese, parsley, salt and pepper.
