In a bowl, mix together all of the dry ingredients. Set aside.

Cream together the butter and sugars.

In a separate bowl, mix together the mashed bananas, honey, eggs and vanilla. Add this to the creamed butter mixture.

Add dry ingredients to the wet ingredients. Mix well.

If you want to add any extras in-chocolate chips, nuts, etc.-do it now. I found that variations where I used fruit (pineapple or strawberries) made a much moister bread.

Separate the batter into two greased bread pans, and bake at 350 degrees for 45-60 minutes. (Start checking at 45 minutes for doneness with a toothpick.)

Note: I have also made the batter in mini-muffin pans, and they only had to cook for about 10-12 minutes. In regular size muffin pans, it took closer to 20-25 minutes.
