For the latkes:

Place cauliflower florets into a basket steamer above a pot of boiling water.

Cover the pot and steam for about 10 minutes, or until soft.

Remove from heat.

Combine cauliflower with all of the other latke ingredients in a large bowl and mix to combine.

Spoon 3/4 of the mixture into a food processor and puree until smooth (but not overly-pureed).

Place puree back into the bowl and mix it into the remaining 1/4 of the ingredient combination.

Heat a nonstick skillet over medium heat (spray the skillet with cooking spray if desired).

Place 2 Tablespoons of the batter into pan (you may cook multiples at the same time, depending on the size of your pan) and press each scoop into a circle.

Cook for 3-4 minutes on one side then flip and cook on other side until lightly brown and cake-like.

Remove from pan and serve hot.

You may place them on a baking sheet in an oven heated to 200 degrees F while the remaining latkes cook.

For the apple yogurt: Mix all ingredients in a bowl and serve on top of the latkes!
