Vegetable And Garbanzo Bean Soup

   Heat the olive oil in a pan and saute the tomato, onion, and garlic.

   When the tomato changes color, add the carrots and cook for 1 minute before adding the broccoli, garbanzos, and water.

   Add salt to taste, cover, and allow to come to a boil.

   Add the zucchini and lower the heat to low. Cover the pan once more and simmer for 5 minutes.

   Serve the soup with cheese, if desired.
