Remove the peel from one lime and one orange using a zester. Or, thinly peel with a vegetable peeler, avoiding any white pith. Cut the peel into thin strips and place in a large bowl.

Remove the peel and pith from the limes, oranges and grapefruit with a small sharp knife. Holding the grapefruit over the bowl, remove the segments by running the knife between each of the membranes. Squeeze any excess juice into the bowl. Thinly slice the limes and oranges and add them to the bowl.

Split the vanilla bean lengthwise and scrape out the seeds. Add the vanilla seeds and sugar to the fruit; mix well. Cover and refrigerate for 1 hour.

Divide the fruit between four serving bowls. Drizzle with honey and serve with yogurt, if desired.
