Ingredients: 1 cup warm water (about 110 degrees F); 2 ¼ teaspoons active dry yeast (1 packet); ½ teaspoon sugar; 1 ¼ cups all-purpose flour; ¼ cup warm water; 2 teaspoons active dry yeast; 1 pinch sugar; 5 large eggs; 2 tablespoons extra virgin olive oil; 1 ½ cups grated parmigiano-reggiano cheese; 4 tablespoons unsalted butter, softened; 1 ½ teaspoons salt; 3 ¼ cups unbleached all-purpose flour (or more if needed); 2 ounces gruyere cheese, cut into 1/2-inch cubes; 1 large egg yolk
