Turnip Soup

   ["in med saucepan, heat 2 tbl of butter over med heat - add leek & cook until very soft but not browned, about 5 mins - set aside - in lg stockpot, combine turnips, broth & enough water to cover turnips by 2"" - add 1 tsp salt & bring to boil - reduce heat to med/lo & simmer until turnips are cooked through, about 20 mins - using slotted spoon, transfer to blender & puree c leeks, remaining 6 tbl of butter, creme fraiche & enough turnip liq to make a smooth, creamy soup - pass through fine strainer & season c salt & pepper - serve c snipped chives"]
