Preheat oven to 375 .

Brown meat with onion for 2 minutes add all seasonings ( set aside half tablespoon of salt and black pepper) then add fresh cilantro

Add bottle of pasta sauce , pour cup of hot water into sauce jar then add to meat.

Let sauce simmer on medium heat for 15 mins.

Remove stems and wash fresh spinach throughly.

Combine ricotta and egg together, with mozzarella cheese add salt , pepper & nutmeg

Starting with meat sauce on the bottom layer with noodles ,then sauce ,then ricotta cheese mixture then fresh spinach.

DO NOT OVERLAP

Top Layer : cover final meat layer with cheddar cheese then sprinkle remaining parmesan cheese and place 2 spinach leaves in the middle

Bake at 375 covered with foil for 40 mins.

Remove foil and bake for 15 mins until cheese is golden brown on the edges and bubbly in the middle
