Turkey On The Grill – a delicious recipe with turkey, Oil, Salt, Water, Red Wine, Hickory wood chips soaked one hour. Easy to follow and perfect for any occasion.

Rinse turkey and pat dry.

Rub with oil inside and out.

Sprinkle with salt and pepper inside and out.

Place in aluminum pan.

Mix 1 quart of water with 1 quart of red wine.

Take racks off grill. Pre-heat grill on high. Sprinkle wood chips around on lava stones, or you can use a wood box. Pour enough of the water/wine mixture OVER the turkey until there is about 1-2 inches in bottom. Place aluminum pan directly on lava stones or coals and close cover. Grill 20 minutes on high, turn heat back heat to low and grill another 2 1/2 hours, with cover closed. Keep water/wine mixture depth 1-2 inches and be sure to pour it OVER the turkey when you are adding more, this helps keep the turkey moist and skin crispy. If you need to make more liquid it is a 50/50 ratio.
