Cook manicotti in boiling water about 18 minutes or until tender but still firm.

Drain and rinse well.

In a large skillet, saute onion in a little margarine for 1 minute. Add turkey to onions and cook until no longer pink.

In another pot, heat sauce.

Add all the spices, the bay leaf and mushrooms. Heat through.

Stir in turkey and onions.

Mix together egg, Ricotta, Mozzarella, parsley and Parmesan in a separate bowl. Stuff cheese mixture into shells.

Spoon 1/3 of the sauce mixture into a 12 x 7 1/2 x 2-inch baking dish.

Place shells on top. Spoon the remaining sauce over the shells, covering them up. Bake, covered, for 25 to 30 minutes or until hot.
