Turkey Feta Meatloaf

   Preheat oven to 375 degrees F.

   Mix together all ingredients until well-blended.

   You can either dig in with your hands or use a rubber spoon.

   I used the spoon because the turkey was so cold!

   Form into a greased loaf pan, smoothing the top so it cooks evenly.

   Pop it into the oven and bake for 40 minutes until cooked through and edges are golden brown.

   Serving suggestions: top with more ricotta cheese, diced tomatoes and garlic and baby spinach, or on two pieces of hearty toasted bread in sandwich form.
