1 lb ground turkey
1 teaspoon salt
¼ teaspoon pepper
28 ounces enchilada sauce (red, mild)
4 ounces green chilies, diced

1 cup frozen corn
1 cup cheddar cheese, grated
1 cup monterey jack cheese, grated
18 corn tortillas

In large sauce pan, heat oil.

Add onion; saute until slightly soft.

Add turkey, salt and pepper, cooking until turkey is no longer pink.

Add 1/2 can of enchilada sauce, green chilies, olives, and corn.

Meanwhile, heat other half of enchilada sauce in large fry pan.

Heat tortillas, two at a time, in this sauce and begin overlapping in 9 X 12 baking dish.

Six tortillas should be sufficient for first layer, and subsequent layers.

Spread 1/3 meat mixture over tortillas, then 1/3 of combined cheeses.

Repeat layering process two more times.

Bake at 350 degrees F for 20 minutes.
