Heat 2 tbsp of oil in a roasting pan and brown the turkey in two batches, cooking for 2-3 mins each side and adding more cooking oil as needed. Set turkey aside and keep warm.

Heat 1 tbsp of oil in the hot pan and saute the onions and peppers for 3 mins. Add the paprika and season to taste. Pour in the stock and cream, bring to a boil and simmer, covered, for 6-8 mins. Add peanuts and cook for another minute. Puree the sauce in a blender. Add thyme and continue to simmer the sauce, covered. Add sugar and lemon juice and season to taste.
