Turbot With Onion Vinaigrette

   For the onion vinaigrette, cut onion into thin slices.

   Heat oil in a saucepan and saute onion until almost translucent.

   Add minced garlic, sprig of thyme, a few capers and a splash of vinegar.

   Season to taste with salt and pepper and continue cooking until onions are translucent.

   For the fish, season turbot to taste.

   Grill on a preheated griddle, until golden, but still medium-rare.

   Place turbot filets in pan with onion and continue to cook until fish is done.

   If desired, saute a few mushrooms and arrange with fish.
