1 cup celery, minced
¼ cup scallion, minced
½ cup red bell pepper, minced
2 teaspoons dry mustard

2 teaspoons Worcestershire sauce
1 teaspoon parsley, minced
1 teaspoon salt
¼ teaspoon black pepper
2 large egg yolks
5 cups peach cilantro relish
2 lbs peaches
½ cup red onion, minced
½ cup lime juice
½ cup cilantro
⅛ teaspoon red pepper flakes

Fish: Place fillets skin side down on lightly oiled baking sheets.
