Tortitas De Papa/Potato Cakes

   Boil the potato with several pinches of salt. Once the potato softens, about 20 minutes, remove it from the pot and set it aside to cool.

   Peel the potato and cut it into thick pieces.

   Mash the potato and add the cheese, parsley, egg, and salt and black pepper to taste. Mix well.

   Heat a skillet on medium heat. Add a small amount of olive oil.

   Make small, round bundles of the potato mix and set them on the pan to cook. Make sure that each side cooks for about 5 minutes. Serve warm.
