Tomato Cheese Pie

   Place pie crust in a deep-dish pie plate.

   Poke lots of holes in the pie crust.

   Bake in a 400 degree oven for about 10 minutes (until slightly browned)

   Remove pie crust from oven and immediately add 1 cup of the cheese.

   Pat the cheese into the hot pie crust. The cheese will melt and seal the bottom of the crust. Set aside for about 15 minutes until cooled.

   Layer tomatoes in the prepared pie crust.

   Sprinkle with Salt & Pepper.

   Pour the 2 beaten eggs over the tomatoes.

   Sprinkle with the Basil

    Mix together the Mayonnaise and the other cup of cheese.

    Spread the Mayo/cheese mixture on the tomatoes.

    Note: At this point you can refrigerate until ready to bake. No more than a few hours.

    Bake at 400 degrees for 15 minutes.

    Reduce heat to 350 degrees and bake for about 20 minutes more. The cheese should be nicely browned.

    Remove from oven and let sit for about 20 minutes to set before serving. (If you slice too soon, it will be runny.)
