Tofu Tacos

   Press excess water out of tofu.

   If you dont drain the tofu, the oil will pop in the skillet.

   a) Slit the package and drain water out.

   b) Get a ton of paper towels.

   c) Place paper towel(s) on a cutting board and place tofu on paper towel.

   d) Let tofu sit for 5-10 minutes.

   The amount of water left in the tofu will determine how long this takes.

    Once tofu is drained, put oil in a skillet and heat on medium.

    Meanwhile, bake taco shells according to the box directions.

    With tofu, a little goes a long way.

    I normally make this for about 4 people, and I use 1 1/2 cups of tofu.

    So add as much (or as little) crumbled tofu to the skillet as you want.

    Add 1/2 a package of taco seasoning.

    Scramble the tofu as you would scramble eggs.

    It doesnt take any longer than 10 minutes for the tofu to be done.

    Add tomatoes, lettuce, salsa, cheese, guacamole or whatever else you would to beef tacos.
