Tlaquepaque-Style Sauce

   In a saucepan, add the tomatoes and the onion. Stir occasionally and cook until just before these are burnt on all sides. Add the garlic and continue to cook for 1 or 2 more minutes.

   Separately, place the chilies on a griddle. Stir constantly to keep them from burning.

   Remove from the stove and add to a blender, along with the tomato bouillon. Puree until smooth.

   Taste and season with salt if needed.
