1. Beat mascarpone in a small bowl until soft. In a separate bowl beat the egg yolks with sugar (reserving 1Tbs) untill the mixture is pale yellow and fluffy. Gradually beat in the soften mascarpone.

2. Beat the egg whites with salt until stiff peaks. Fold the eggs into mascarpone mixture.

3. Line one large dish with lady fingers. Add the reserved sugar to the coffee and stir in brandy.

4. Sprinkle coffee over lady fingers. They should be moist but not saturated. Cover with half of the egg mixture. Make another layer of lady fingers moistered with coffee and cover with the remaining egg mixture. Sprinkle with cocoa powder. Chill for at least 4 hours before serving. Better overnight.
