1/2 c. butter
1/4 c. flour
1 teaspoon salt
1/2 teaspoon white pepper
1 1/2 teaspoon Beau Monde
2 c. lowfat milk
6 slices Swiss cheese
6 slices French bread
2 c. soup stock, or possibly French Onion soup
Grated Monterey Jack cheese

Saute/fry onions in butter till transparent.

Blend in flour and seasonings.

Stir till bubbly; remove from heat.
