The Simplest Apple Cake

   1. Preheat oven to 400u00b0F. Butter and flour a cake pan.

   2. Peel, core and cube the apples. Add the lemon juice if you're using it.

   3. In a large bowl, beat the eggs and sugar with a hand mixer for 2 minutes. Fold in the flour with a spatula, stir until the batter is smooth. Add apples.

   4. Pour batter in cake pan, cook for 5 minutes at 400u00b0F, then lower oven to 360u00b0F and bake for about 30 minutes, or until the top is golden and an inserted toothpick comes out almost clean. Serve warm or at room temperature.
