½ cup mixed mushrooms, quartered
2 tablespoons butter
2 tablespoons all-purpose flour
1 ½ cups beef stock
2 tablespoons Worcestershire sauce
1 onion, chopped
1 egg yolk
1 cup blue cheese, crumbled low fat
4 cups cauliflower
3 tablespoons fat free sour cream

Brown meat, and add in the mushrooms and onions and cook until tender, 6 to 7 minutes.

Meanwhile, heat a small saucepan over medium heat and melt butter, whisk in the flour.

Cook 2 minutes then whisk in the beef stock, add Worcestershire and season with salt and pepper.

Thicken 6 to 7 minutes.

Boil cauliflower until it becomes soft.

Mash while mixing in the sour cream and egg yolk then fold in the bleu cheese.
