1
Preheat your oven to 350 F. Spray a baking dish (one that is big enough to fit all of your pepper halves) with cooking spray or grease with some olive oil.
-
2
Line up the pepper halves in your prepared pan.
-
3
Set aside.
-
4
In a large pan over medium heat, saute your onions until soft and fragrant.
-
5
Add your garlic and cook 1-2 minutes on medium-low.
-
6
Turn up the heat to medium-high and add your ground turkey.
-
7
Cook until turkey is no longer pink.
-
8
Add your taco seasoning, cayenne pepper, diced tomatoes, corn, chilies and beans.
-
9
Let this simmer for about 5 minutes.
-
10
Add your rice, sour cream or yogurt and cilantro.
-
11
Taste and adjust seasoning.
-
12
Add a little salt and pepper, perhaps?
-
13
Turn off the heat and spoon your turkey mixture into your prepared peppers.
-
14
I like mine filled with plenty of meat and veggie mixture.
-
15
You may prefer more peppers and less filling.
-
16
Your choice.
-
17
Bake in your preheated oven for about 45 minutes.
-
18
Remove from oven and sprinkle your cheese over each pepper.
-
19
Return to your oven and bake for another 5 minutes until cheese is nicely melted.
-
20
Serve with a spoonful of sour cream and a sprinkle of cilantro.
