Teriyaki Tofu And Soba Noodle Salad

   Pour teriyaki sauce over tofu in a bowl; turn to coat. Let stand 10 mins to marinate. Cook noodles in a large saucepan of boiling water for 4 mins or until tender. Drain. Refresh under cold water. Drain well. Transfer to a large bowl.

   Heat a wok or large skillet on medium heat. Add 1 tbsp of the oil; swirl to coat surface. Remove tofu from marinade, reserving marinade. Cook tofu for 2 mins per side until golden. Add reserved marinade; stir-fry for 1 min or until browned.

   Transfer tofu mixture to a plate. Cover to keep warm. Wipe wok clean. Heat wok on high heat. Add remaining 1 tbsp oil; swirl to coat. Add onion and ginger; stir-fry for 3 mins or until softened. Remove from heat. Cool.

   Add tofu, onion mixture, pepper, snow peas and cilantro to noodles; toss to combine. Serve topped with additional cilantro leaves.
