2/3 c. milk
1 c. Fiber One cereal, crushed
1 tsp. vanilla
1 1/4 c. sugar
1/2 c. (1 stick) margarine or butter, softened
2 eggs
2 1/2 c. flour
3 tsp. baking powder
1 tsp. salt
1 tsp. ground cinnamon

Place oven rack in lowest position. Grease bottoms only of two 8 1/2 x 4 1/2 x 2 1/2-inch loaf pans. In small bowl, mix bananas, milk, cereal and vanilla

with a spoon.

Let stand 5 minutes.

In a large bowl, mix sugar and margarine.

Stir in eggs until well blended.

Beat in banana mixture thoroughly.

Stir in together remaining ingredients; pour into pans.

Bake 50 to 60 minutes or until toothpick inserted into center comes out clean.

Cool 10 minutes.

Loosen sides of loaves. Remove from pans.

Cool completely before slicing.
