Tajine Of Chicken And Sausage W/ Fresh Tomato Sauce

   1.Cut chicken breasts into even strips. Season flour with salt and pepper and/or Curry powder. Put Quinoa, Thyme and Rosemary in a shallow pan. Dredge Chicken lightly in flour and dip in egg wash and then dredge again in Quinoa. Set on pan or plates so chicken is not touching cover and refrigerate.

   2.Heat 1 1/2 tablespoons olive oil in a pan until hot. Add the diced sausage and cook through. Remove sausage from pan, cover and set aside.

   3.Add chicken stock, 1/2 cup white wine and 2 tablespoons olive oil to pot and set on medium heat.

   4.Deglaze the pan with small amounts of olive oil and white wine. Add 2 tablespoons of olive oil and heat until just hot and add diced onions. Cook over medium heat until onions are cooked through. Lower heat to medium-low and add garlic. Cook for 1 minute, stir then add tomatoes and adjust heat to a simmer. Cook for 15 minutes. Add basil and salt and pepper to taste.

   5.While tomato sauce cooks put 2 ladles of stock into a small pot with couscous on medium-high heat. When the liquid is almost fully absorbed add another ladle of stock. Add the zucchini and artichoke hearts halfway through cooking. Continue this until couscous is al dente, making sure there is no liquid in bottom of pot when this happens.

   6.Preheat oven to 350u00b0. Coat bottom of casserole dish with olive oil and put into oven to heat oil. Make sure the oil does not smoke.

   7.When couscous is done portion to Tajines and mix in sausage and tomato sauce (as they finish) Cover Tajines with their lids and hold over low heat if necessary.

   8.Carefully remove casserole dish from oven and add the chicken strips, serving side down, and place back in oven. Watch carefully, when the bottom of the chicken strips begin to brown (about 3-5 minutes) carefully flip and cook until chicken is just done. Remove from oven

   9.Add three chicken strips to top of each dish stirring first if needed. Cover with 1/2 cup of shredded cheddar. Cover with Tajine lid and serve immediately.
