Preheat oven to 400 degrees F. Line a baking sheet with foil or Silpat.

Brown turkey and add taco seasoning.

Let simmer until thoroughly browned.

Remove from heat.

Make egg wash by mixing the egg with 1 tablespoon water; beat.

Set aside.

Place an egg roll wrap on a cutting board so its in the shape of a diamond.

With a pastry brush, brush the inner edges of the egg roll wrap with egg wash.

Add turkey, cheese, onion, salsa and whatever other fillings you choose to the center of wrap.

Pick up the bottom point and fold it over the filling, squeezing it slightly in the center to ensure a tight roll.

Then bring a side point over the center and repeat on the other side.

Roll the wrap up towards the top point.

To complete the roll, bring the top point down and press into the center.

Place on lined baking sheet.

Brush each roll with remaining egg wash. Run your finger along the seams to be sure they stay sealed.

Bake for 20 minutes or until rolls are golden brown.

Top with toppings.
