Preheat oven to 250 degrees F.

Crush 2 cups Oreo cookies in blender or food processor until coarsely ground.

Mix with melted butter and egg white in medium bowl until combined.

Press mixture into bottom of desired pan with hand and bake for 10 minutes.

While baking crust, prepare filling:.

Beat the cream cheese and the sugar with mixer until fluffy.

Add the vanilla and the eggs and mix until completely incorporated.

In a separate bowl, stir together the cornstarch and flour.

Add 1/4 cup of the cream to the flour mixture and whisk together until smooth.

Add the flour mixture and the remaining 3/4 cup of cream to the cream cheese mixture and beat with mixer at high speed for 5 minutes, or until thick and fluffy.

Break 1/2 package of Oreo cookies by hand into pieces (big chunks are best) and fold into batter.

Pour batter into pan with crust and place pan into larger baking or roasting pan.

Place pans into oven and pour water into roaster so that water comes up to 3/4-high level on cheesecake pan.

Bake for 1 hour or until center of cheesecake is set.

Cool completely on wire rack and then make chocolate sauce:.

Boil 1 cup of heavy cream and then pour over 8 ounces chocolate in medium heat-safe container.

Stir until chocolate is completely melted and pour over cooled cheesecake.

Sprinkle top of cheesecake with several crumbled Oreos or drizzle with a few melted white chocolate pieces.
