Swiss Cheese And Tomato Tart

   Preheat oven to 350u00b0F. For the pastry shell, line the base and sides of an 8 inch springform cake pan with the phyllo pastry, spraying between the sheets with the olive oil. Tuck the edges into the pan and place on a baking sheet.

   Arrange the tomatoes and cheese in the pastry shell. Whisk the eggs and cream in a large bowl. Season with salt and pepper and pour on top of the tomatoes. Bake for 40-45 mins or until golden brown and just set. Let cool for 15 mins then sprinkle with basil and serve with the mixed greens.
