Sweet Tapioca Pudding With Anise

   Soak the tapioca for a few minutes in water seasoned with a pinch of salt.

   Combine the milk, anise, and lemon zest in a small saucepan and heat until boiling.

   Add the tapioca and sugar and cook over low heat, stirring constantly until the mix thickens (approximately 30 minutes).
