Sweet-Spicy Sweet Potato and Pork

   Chop the sweet potatoes roughly into small sizes, and the pork into bite-sized pieces.

   Discard the stiff roots of the shimeji mushrooms and shred them apart.

   Heat some oil (unlisted) in a pot and cook the pork.

   Here, I used a block of pork shoulder roast.

   Add sweet potatoes to the pot from step 2.

   Add shimeji mushrooms and ingredients - in listed order - to the pot from step 3.

   Cover the pot and simmer over medium to high heat.

   Stir-up from the bottom while cooking.

   It's done when the sauce has reduced Scatter some green scallions if you wish.

    If you set it aside briefly with a lid on, the flavor really soaks in.
