Tofu can be cooked a variety of ways and preferred firmness of tofu should be used; but here is the way I fix it is this setting.

Remove tofu brick from package. Fold several layers of paper towels. Lay tofu on paper towels and cover with another several layers of paper towels. Place a plate or pan on top for weight. Allow to dry for about 15 min.

Cut tofu brick in half, then slice again down the middle; making 4 fairly thin equal pieces.

Set oven to 350 and bake for approx. 25 minutes turning the tofu over half way through. Remove from oven. To get the tofu nice and crispy.

Pan fry the tofu, on high in a little olive oil and brown the top and bottom. Lower heat to low and add sauce allow to simmer till the sauce is warm. Serve over rice.

This sauce can be made a day before or while the tofu is in the oven.

Combine ingredients in bowl.

I use a very fine grater to mince garlic, onion and Ginger. This gets these ingredients into a fine mush which is easily incorporated with the liquid portion of the sauce.

This is mildly spicy so adjust sriracha amount or red-pepper to taste.
