Sweet & Spicy Bacon Wrapped Water Chestnuts

   Preheat the oven to 300 F

   Start by cutting the bacon strips in half.

   Wrap 1/2 a strip of bacon around a whole water chestnut.

   Slide it onto a skewer to secure the bacon around the water chestnut.

   Repeat with a second water chestnut on the same skewer.

   Keep going until you run out of bacon or water chestnuts, securing two wrapped water chestnuts to each skewer.

   Place skewers in a shallow 9x13 baking dish and bake at 300 F for 1 to 1 1/2 hours, or until bacon is crispy.

   Remove skewers from baking dish and drain bacon fat.

   Place half the skewers back in the same pan, and half the skewers in another baking dish (I used an 8x8).

    In a small bowl, mix 1/2 cup dark brown sugar and 1/2 cup ketchup.

    Spoon this over one pan of skewers, turning to coat on all sides.

    This will be your sweet batch.

    In another small bowl, mix 1/2 cup dark brown sugar and 1/4 cup Sriracha.

    Spoon this over the second pan of skewers, turning to coat on all sides.

    This will be your spicy batch.

    Place both pans back in the oven for 1 additional hour.
