Ingredients: 2 large Chicken breasts; 1 can Pineapple (you could always use fresh); 1 large Red bell pepper; 1 large Yellow bell pepper; 1 clove Chopped garlic; 3 tbsp Light brown sugar; 4 tsp Corn starch mixed with 4 teaspoons cold water; 3 tbsp Rice wine vinegar; 1/4 cup Chicken stock; 2 dash Dried red pepper; 1 Salt & pepper; 3 tbsp Oil

Servings: persons

2 large Chicken breasts
1 can Pineapple (you could always use fresh)
1 large Red bell pepper
1 large Yellow bell pepper
1 clove Chopped garlic
3 tbsp Light brown sugar
4 tsp Corn starch mixed with 4 teaspoons cold water
3 tbsp Rice wine vinegar
1/4 cup Chicken stock
2 dash Dried red pepper
1 Salt & pepper
3 tbsp Oil

Take a large skillet, add oil heat it up.

Add chicken (cut into strips or chunks) with chopped garlic and lightly brown.

Removed chicken and add chopped red & yellow bell peppers cook for 1 minute until soft.

Then bring to simmer the brown sugar, pineapple juice, pineapple chunks & rice wine vinegar (can sub white wine vinegar) & chicken stock.

Once reduced add the corn starch mixture slowly but keep stirring.

Then add the chicken strips and cook for 5 minutes.

Serve over rice'(Hint: you could top with bottled sweet and sour for an extra kick)
