Ingredients: 3 cup sweet potatoes (peeled, cubed and boiled until tender); 1 tbsp chopped chive; 1 clove garlic --grated; 1 tsp chopped onion; 1 egg; 1 tsp baking powder; 1/4 tsp orange zest; 1/4 cup flour; 1 tbsp softened butter; 1 TOPPING; 1 cup grated mozzarella cheese; 1/3 cup bacon (I used turkey )

Servings: persons

3 cup sweet potatoes (peeled, cubed and boiled until tender)

1 tsp chopped onion
1 egg
1 tsp baking powder
1/4 tsp orange zest
1/4 cup flour
1 tbsp softened butter
1 TOPPING
1 cup grated mozzarella cheese
1/3 cup bacon (I used turkey )

Gather ingredients

In a bowl add sweet potato , garlic, onion, butter and chive --mash until smooth--add salt and blackpepper to taste.

Add the flour, baking powder, zest and egg --mix to combine

On a parchment lined cookie sheet gently press the sweet potato mixture into a circle -- as shown in step pic ( you can also use a greased pizza pan )

Sprinkle half of the cheese- top with the bacon -- sprinkle the other half of the cheese over.

Bake in a preheated 450F oven for 18 - 20 minutes

Cool -- cut into wedges -- you can serve as is or topped with ketchup or a dollop of sour cream
