Sweet Potato Waffles

   1. Preheat waffle iron.

   2. In a large bowl, combine cooled sweet potatoes, butter, egg white, and milk. Beat until blended. Add flour, baking powder and salt. Stir until smooth.

   3. Spray waffle iron with nonstick vegetable coating.

   4. Pour 3/4 cup of batter on to center of waffle iron and bake until done.
