Sweet Potato Pancake with Apple-Cream Cheese Sauce

   Mix cream cheese, applesauce and cinnamon until blended.

   Refrigerate until ready to use.

   Combine remaining ingredients; shape into 24 patties (or shape into 1 patty for trial recipe), using a heaping 1/2 cup potato mixture for each.

   For each serving: Cook 1 patty in nonstick skillet, sprayed with cooking spray, on medium heat 4 min.
