1 cup Unsalted Butter, Room Temperature
1 cup White Sugar
2 cups Brown Sugar
3 whole Large Eggs
15 ounces, weight Sweet Potato Puree
3 cups All-purpose Flour
1 Tablespoon Baking Powder
1 teaspoon Baking Soda
1 teaspoon Salt
2 teaspoons Cinnamon
1/2 teaspoons Ginger
1/2 teaspoons Nutmeg
1/4 teaspoons Cloves

Preheat the oven to 350 degrees. Prepare two loaf pans with baking spray.

In the bowl of a mixer, cream the butter and sugars together until light and fluffy. Add the eggs one at a time and mix to combine. Add the sweet potato puree and mix well. (It will look curdled, but it is not!)

In a fine mesh strainer, add all of the dry ingredients and sift them together into a bowl. Add the dry ingredients to the sweet potato mixture and mix until just combined.

Add the batter to the prepared loaf pans and bake at 350 degrees for about 60 minutes. The bread is ready when a toothpick inserted in the center comes out clean.
