2 cups sliced red onion
3 cups chopped peeled peaches
2 cups chopped tomato
2 tablespoons minced peeled fresh ginger
1/2 cup cider vinegar
1/2 cup fresh orange juice (about 1 orange)
1/3 cup packed brown sugar
1 teaspoon ground allspice
1/4 teaspoon kosher salt
1/4 teaspoon black pepper

Heat the olive oil in a large nonstick skillet over medium-high heat. Add the onion, and saute for 10 minutes, stirring frequently. Add peaches, tomato, and ginger, and cook for 2 minutes. Add the vinegar and remaining ingredients, and bring to a boil. Reduce heat, and simmer for 20 minutes. Place the peach mixture in a food processor, and process until smooth.
