Heat the 1 cup milk until lukewarm then melt the butter in it. Transfer half of the milk to a bowl and stir in the yeast and 1 tbsp sugar until dissolved. Set aside.

For the dough, mix together the flour, salt and 1/3 cup sugar. Make a well in the middle and pour in the milk and yeast mixture. Mix until smooth then cover and leave in a warm place for 15 mins to rise. Add the remaining milk and butter mixture, the 2 eggs and grated carrot to the dough. Knead until smooth then cover and leave to rise again for 30 mins.

Turn the dough out onto a floured surface and divide into 8 equal portions. Shape into bunnies, using raisins for eyes. Transfer to a lined baking sheet and leave to rest for 5 mins.

Meanwhile, for the glaze, mix the egg yolk with the remaining 2 tbsp milk. Brush in on the bunnies and bake for about 15 mins until golden brown. Cool on a wire rack and decorate with ribbon.
