Prick the sweet potatoes and roast them in their skins for 30 minutes or until soft.

Allow to cool, peel, and mash with the butter/margarine.

Heat the olive oil in a saucepan and gently fry the onion for about 5 minutes until soft.

Add the stock with the tomatoes, herbs, yeast extract and soy sauce and stir.

Bring to the boil, turn down the heat and simmer for 15 minutes.

Stir in the beans.

Pour the tomato and bean mix into a casserole dish and place the sweet potato mash over the top.

Sprinkle the cheese over the top and cover in foil.

Bake for 30 minutes.

Remove foil and bake for a further 15 minutes.
