Ingredients: 2 cups left over pot roast (shredded); 14-½ cup barbecue sauce; 1 -2 chipotle chile in adobo, chopped (you can omit the seeds if you want); 2 tablespoons adobo sauce; ½ cup orange marmalade; ¼ cup honey; corn or flour tortilla; queso fresco or monterey jack cheese or your favorite cheese; lettuce; tomatoes; onion; cilantro, chopped

2 cups left over pot roast (shredded)
14-½ cup barbecue sauce
1 -2 chipotle chile in adobo, chopped (you can omit the seeds if you want)
2 tablespoons adobo sauce
½ cup orange marmalade
¼ cup honey
corn or flour tortilla
queso fresco or monterey jack cheese or your favorite cheese
lettuce
tomatoes
onion
cilantro, chopped

Mix barbecue sauce and 1/2 chipotle pepper (if you like it spicy add the whole pepper), heat over low heat.

Add shredded roast, and simmer (you may need to add just a little water).

In small bowl combine the other 1/2 to 1 whole chipotle, adobo sauce, orange marmalade and honey.

Heat in microwave.

Spoon a couple tablespoons of meat mixture in tortilla.

Add cheese and drizzle with marmalade sauce.

Heat for about 25 seconds in microwave.

Top with lettuce, tomatoes, onion and cilantro if desired.
