Sweet and Salty Tender Chicken with Onion Mayonnaise Sauce

   Slice the onions very thinly using a mandoline, and put into a bowl of cold water.

   Take the skin off the chicken and slice into strips on the diagonal.

   Season the chicken with salt and pepper.

   Heat some oil in a frying pan and put in the chicken.

   Cook over low-medium heat until cooked halfway through, then add the ingredients marked (soy sauce, mirin, sake).

   When the chicken is cooked through, take it out.

   Reduce the sauce.

   Drain the sliced onion, season with salt and pepper, and mix with the mayonnaise.

   Mound the onion mayonnaise on top of the chicken, pour over the sauce and garnish with some parsley if you like.
