In the bowl of your stand mixer, blend vanilla sugar with the lemon zest. Beat in eggs, one at a time. Add in salt and almond extract.

Mix in the flour and melted butter. Sprinkle coarse sugar and almonds on top and mix to combine.

Pour batter into a greased and floured 9-inch cake pan. Bake in a 350u00b0F oven for about 25 minutes. Remove from the oven, cool several minutes before turning out of the pan.

Note: I used homemade vanilla sugar (you can find a recipe on my blog). But you can certainly substitute granulated sugar mixed with the seeds from half of a vanilla bean, scraped. Or instead of the seeds you can use 1/2 teaspoon pure vanilla extract.
